A Mexican Street Corn Dip Recipe You’ll Want to Serve at Every Gathering

You’re going to love everything about this Mexican street corn dip recipe! And this post makes it easier than ever to create it in less than 20 minutes.

Whether you’re hosting a party and need a crowd pleasing dip or you’re looking for a tasty snack to enjoy over a weekend at home, this street corn dip recipe is the answer!

Like many Mexican moms, I grew up flagging down the elote (corn) man every chance I got! And now, I’m excited to bring you those nostalgic flavors of hot buttery corn paired with cotija cheese in a dip that’s much easier to prepare ahead and share with a group than traditional street corn.

This is going to become a family favorite in no time! 

Mexican Street Corn Dip Recipe

Ingredients for Mexican Street Corn Dip:

Serving size: 8-12 People

  • 2 cans of corn 
  • 8 ounces cream cheese
  • 16 ounces of sour cream
  • 5 ounces Mayonnaise with Lime Juice (or add in your own lime juice to regular mayo)
  • 1 teaspoon of butter
  • Cotija cheese
  • Spices: chili powder, onion powder, garlic powder
  • ½ diced yellow onion
  • 1  tablespoon minced garlic
  • Tapatio

For Garnish

  • 1 sliced lime 
  • chopped cilantro

Chip Recommendations – This is a sweeter dip with plenty of diary to balance bold flavors so I recommend a bolder chip or something with extra crunch.

  • Flamin’ Hot Cheetos
  • Queso Ruffles
  • Kettle Chips Jalapeño 

Directions for Mexican Street Corn

  1. Add butter to a skillet on medium heat, once melted add in 1/2 of the onion diced,  2 cans of drained corn, a little squeeze of mayo (tablespoon) and all of the spices! (½ teaspoon of each spice but you can increase the chili powder to add heat).
  2. Combine cream cheese, sour cream, cotija cheese (½ package, and all of the spices! (½ teaspoon of each spice). Mix together.
  3. Add Tapatio to the bowl to your desired heat level (I like just a little to give it a kick but feel free to turn up the heat!)
  4. Add the sour cream and cheese bowl to the corn while on low heat and mix all of the ingredients evenly.
  5. Top with the remaining cotija, hot cheeto crumbles, and fresh cilantro
  6. Serve chilled or warmed with a bold chip!

Other Delicious Ways to Serve Mexican Street Corn Dip

Not only is this mixture great for spicy and bold chips, it can also level up so many other foods!

Here are a few ideas to get you started:

  • Hot Dogs – Use the dip as a hot dog topping and you will not be disappointed!
  • Tostadas – Add this dip to a bean and cheese tostada will make it even more satisfying.
  • Nachos – A fun addition to classic nachos, especially if you’re trying to make them more filling.
  • Layered Bean Dip – Add a tasty new layer to your favorite layered bean dip recipe!

It’s especially nice to have something that you can prepare ahead of time and take with you the next day for a big family gathering. It’s also less messy than eating a dripping hot street corn– although I love those memories of sitting in my grandma’s yard with my cousins eating delicious elotes as a kid.
